Spiced Chicken With Honey-ginger Glaze

Ingredients

- 2 tablespoons ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon pepper
- 1 teaspoon fresh ground pepper
- 1 teaspoon salt
- 2 teaspoons olive oil, approximately
- 8 chicken thighs or 8 chicken drumsticks
- 1/4 cup honey
- 1/4 cup dry sherry
- 2 tablespoons grated fresh ginger
- 1 medium lemon, juice of
Recipe
- 1 heat the oven to 325 degrees.
- 2 line rimmed baking sheet with foil.
- 3 in a small bowl, combine the ginger, coriander, peppers and salt.
- 4 add just enough oil to make a paste.
- 5 rub the spice paste under and over skin of chicken.
- 6 bake on prepared pan 20 minutes.
- 7 meanwhile, combine the honey, sherry, ginger and lemon juice.
- 8 spoon some of the glaze over the chicken and continue to bake, spooning on additional glaze every few minutes, until chicken is cooked through, about 15 minutes longer.
- 9 makes 4 servings.
