Tomato Chili Sauce

Total Time: 16 mins Preparation Time: 15 mins Cook Time: 1 min

Ingredients

  • Servings: 4
  • 2 medium ripe tomatoes
  • 2 scallions, thinly sliced
  • 2 tablespoons peanut oil
  • 1 tablespoon fresh coriander, chopped
  • 2 teaspoons red wine vinegar
  • 2 teaspoons minced jalapeno peppers
  • salt

Recipe

  • 1 blanch tomatoes in a large saucepan of boiling water for about 15 seconds.
  • 2 cool in bowl of ice water and slip off skins.
  • 3 cut tomatoes crosswise in half and squeeze out seeds; then finely chop with knife or in food processor.
  • 4 transfer to mixing bowl and whisk briefly.
  • 5 whisk remaining ingredients in small bowl until blended.
  • 6 add to tomatoes and whisk vigorously.
  • 7 whisk again just before serving.
  • 8 serve with grilled hamburgers, fish, shrimp or chicken.
