Seared Green Beans, Water Chestnuts, Shallots And Soy Glaze

- 1 lb green beans, ends trimmed and cut in half on an angle
- 1 (1/2 cup) can water chestnut
- 1/2 cup shallot (approximately 2 diced fine)
- 1/2 cup roasted red pepper
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1/2 cup chicken broth
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon sesame seeds, toasted
- 1 teaspoon olive oil

- 2 dry pan toast the sesame seeds to lightly brown. just 1-2 minutes in a dry pan and lightly toast. remove and then set to the side to cool.

- 4 now in a medium saute pan, add the olive oil and heat to medium. add the shallots and cook 2-3 minutes until slightly soft. add the water chestnuts, red peppers, soy, honey, broth and seasoning. add the beans and cover. cook on medium low for 5-8 minutes until the beans are soft but still have a little texture to them. remove the cover and let the sauce reduce 2 minutes. remove to a serving bowl and top with the sesame seeds and serve.
