Slow Cooker Caribbean Chicken

Ingredients

  • Servings: 5
  • 3 large sweet potatoes, peeled and sliced into 1/2 thick rounds
  • 1 navel orange, juice of
  • 1/4 cup chicken broth
  • 1/2 teaspoon salt
  • 5 garlic cloves
  • 1 jalapeno pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon allspice
  • 5 skinless chicken thighs, bone in
  • 1 mango, peeled and cubed
  • 1 avocado, cubed
  • 1 tablespoon lime juice

Recipe

  • 1 place sweet potato slices in slow cooker. mix orange juice, broth, and 1/4 t. salt; pour over potatoes.
  • 2 combine garlic, jalapeno, oil, cumin, thyme, and allspice in food processor to paste.
  • 3 sprinkle chicken with 1/4 t. salt and spread with paste. place chicken on potatoes. cover cooker and set to high for 4 hours or low for 6 to 8 hours.
  • 4 5 minutes before serving, combine mango, avocado, lime and salt. serve over dish. serves 5.
