Thai Spiced Chicken And Carrot Stew

Ingredients

  • Servings: 4
  • 1 lb chicken breast, boneless, skinless, cubed
  • 1 1/4 cups chicken broth
  • 4 carrots, sliced
  • 3/4 cup scallion, sliced
  • 1 tablespoon minced ginger
  • 1 tablespoon garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon thai peanut sauce
  • 1 teaspoon sugar
  • 1/2-1 teaspoon sesame oil
  • salt and pepper
  • 3 cups cooked rice, warm

Recipe

  • 1 combine all ingredients except sesame oil, salt, pepper and rice in slow cooker.
  • 2 cover and cook on high 3-4 hours.
  • 3 season to taste with sesame oil, salt and pepper.
  • 4 serve hot over rice.
