Ingredients

- 1 lb chicken breast, boneless, skinless, cubed
- 1 1/4 cups chicken broth
- 4 carrots, sliced
- 3/4 cup scallion, sliced
- 1 tablespoon minced ginger
- 1 tablespoon garlic
- 1 tablespoon soy sauce
- 1 tablespoon thai peanut sauce
- 1 teaspoon sugar
- 1/2-1 teaspoon sesame oil
- salt and pepper
- 3 cups cooked rice, warm
Recipe
- 1 combine all ingredients except sesame oil, salt, pepper and rice in slow cooker.
- 2 cover and cook on high 3-4 hours.
- 3 season to taste with sesame oil, salt and pepper.
- 4 serve hot over rice.
