Turkey Coldiron

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 tablespoon garlic-infused olive oil
  • 1 lb ground turkey
  • salt, to taste
  • pepper, to taste
  • 2 cups chicken broth, 99% fat free
  • 1 (5 ounce) package spinach, triple washed
  • 1 (15 ounce) cannellini beans, drained

Recipe

  • 1 heat the oil in a large skillet over moderately-high heat until hot but not smoking. add the ground turkey and using a wooden spoon, break up into crumbles.
  • 2 cook turkey until done.
  • 3 season with salt and pepper.
  • 4 add the stock and scrape up any bits on the bottom of the pan.
  • 5 bring to a boil, and let simmer until slightly reduced, about 10 minutes.
  • 6 stir in the spinach and cannelini beans and heat through.
  • 7 season with salt and pepper, a second time, if desired.
  • 8 3/4 c cheddar cheese, no fat, see not below.
  • 9 this can be served over noodles or brown rice. i eat it plain and add cheddar cheese to it.
