Turkey Coldiron

Ingredients

- 1 tablespoon garlic-infused olive oil
- 1 lb ground turkey
- salt, to taste
- pepper, to taste
- 2 cups chicken broth, 99% fat free
- 1 (5 ounce) package spinach, triple washed
- 1 (15 ounce) cannellini beans, drained
Recipe
- 1 heat the oil in a large skillet over moderately-high heat until hot but not smoking. add the ground turkey and using a wooden spoon, break up into crumbles.
- 2 cook turkey until done.
- 3 season with salt and pepper.
- 4 add the stock and scrape up any bits on the bottom of the pan.
- 5 bring to a boil, and let simmer until slightly reduced, about 10 minutes.
- 6 stir in the spinach and cannelini beans and heat through.
- 7 season with salt and pepper, a second time, if desired.
- 8 3/4 c cheddar cheese, no fat, see not below.
- 9 this can be served over noodles or brown rice. i eat it plain and add cheddar cheese to it.
