Turkey Meatballs

Ingredients

- 1 cup water
- 1/2 cup chopped dry sun-dried tomato
- 1 1/2 lbs ground turkey
- 1/4 cup finely chopped yellow onion
- 1 -2 garlic clove, minced
- 1 large egg, beaten
- 1/2 cup fresh breadcrumb
- 1/4 cup milk
- 1/4 cup chopped parsley
- 1/4 teaspoon salt
- 1/2 teaspoon poultry seasoning
- fresh ground pepper
- 1 cup chicken broth
- 2 tablespoons wine
- 2 tablespoons flour
- salt
- fresh ground pepper
Recipe
- 1 in a small pan over high heat, bring water to a boil.
- 2 add in tomatoes; remove pan from heat and let stand 10 minutes; drain and dry.
- 3 preheat oven to 375°.
- 4 in a big bowl mix tomatoes, turkey, onion, garlic, egg, bread crumbs, milk, parsley, salt, poultry seasoning, and pepper.
- 5 shape into 1 ½ inch meatballs; place on a lightly oiled or sprayed baking sheet with a rim.
- 6 bake about 15 minutes, until browned, stirring once.
- 7 meanwhile, in a saucepan whisk broth and wine with flour.
- 8 place over med-high heat; bring to a boil.
- 9 whisk until thickened; season with salt and pepper.
- 10 add meatballs and juices; simmer until flavors are blended, about 5 minutes.
- 11 serve over hot cooked rice or noodles.
