Tabouli Bouli Couscous Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 2 bunches fresh italian parsley, finely chopped
  • 1 small red onion, finely chopped
  • 10 cherry tomatoes, chopped in 1/2
  • 3 lemons, juice of (freshly squeeze)
  • 5 tablespoons olive oil (optional)
  • 1 cup couscous
  • 1 1/2 cups chicken or 1 1/2 cups vegetable stock
  • 1 garlic clove, crushed (more or less to taste)

Recipe

  • 1 boil stock add couscous take off heat and cover set aside to cool.
  • 2 put everything in a bowl and add cooked couscous once cooled.
  • 3 eat and/or refrigerate. (i think its better next day).
