Tabouli Bouli Couscous Salad

Ingredients
- Servings: 4
- 2 bunches fresh italian parsley, finely chopped
- 1 small red onion, finely chopped
- 10 cherry tomatoes, chopped in 1/2
- 3 lemons, juice of (freshly squeeze)
- 5 tablespoons olive oil (optional)
- 1 cup couscous
- 1 1/2 cups chicken or 1 1/2 cups vegetable stock
- 1 garlic clove, crushed (more or less to taste)
Recipe
- 1 boil stock add couscous take off heat and cover set aside to cool.
- 2 put everything in a bowl and add cooked couscous once cooled.
- 3 eat and/or refrigerate. (i think its better next day).
