Triple-decker Chicken Clubs

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2/3 cup light mayonnaise (or salad dressing)
  • 1/4 teaspoon black pepper
  • 12 ounces cooked chicken breast strips, refrigerated, cooked, chopped
  • 1 cup apple, cored, chopped
  • 8 lettuce leaves
  • 12 bread, wheat, whole, toasted
  • 1 tomato, large, sliced
  • 8 slices bacon, packaged cooked, ready-to serve

Recipe

  • 1 in a large bowl, combine mayonnaise and pepper. stir in chicken and apple. place a lettuce leaf on 4 of the toasted bread slices. top lettuce with tomato slices and bacon, then another slice of bread. top with remaining lettuce; spoon chicken mixture on lettuce. top with remaining bread slices.
  • 2 for smaller sandwiches, use 8 slices bread and 4 lettuce leaves. assemble sandwiches as directed, omitting the middle layer of bread and lettuce.
