Ingredients
- Servings: 4
- 2/3 cup light mayonnaise (or salad dressing)
- 1/4 teaspoon black pepper
- 12 ounces cooked chicken breast strips, refrigerated, cooked, chopped
- 1 cup apple, cored, chopped
- 8 lettuce leaves
- 12 bread, wheat, whole, toasted
- 1 tomato, large, sliced
- 8 slices bacon, packaged cooked, ready-to serve
Recipe
- 1 in a large bowl, combine mayonnaise and pepper. stir in chicken and apple. place a lettuce leaf on 4 of the toasted bread slices. top lettuce with tomato slices and bacon, then another slice of bread. top with remaining lettuce; spoon chicken mixture on lettuce. top with remaining bread slices.
- 2 for smaller sandwiches, use 8 slices bread and 4 lettuce leaves. assemble sandwiches as directed, omitting the middle layer of bread and lettuce.
