Ingredients

- 4 boneless skinless chicken breasts
- 2 slices thick bread
- 2 tablespoons dried herbs
- 14 ounces chopped tomatoes
- 1 garlic clove, crushed
- 1 teaspoon balsamic vinegar
- 2 teaspoons tomato paste
- salt and pepper
Recipe
- 1 heat the ovem to 375°f split the chicken breasts almost in half and open out like a book.
- 2 place in a non-stick roasting tin.
- 3 whizz the bread into crumbs in a food processor, then mix with the herbs. mix the tomatoes with the garlic, vinegar and tomato paste.
- 4 spread the sauce over the chicken, sprinkle with the crumbs then bake for 20-25 minutes until the chicken is tender.
- 5 serve with steamed veggies.
