Tomato And Crispy Crumb Chicken

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breasts
  • 2 slices thick bread
  • 2 tablespoons dried herbs
  • 14 ounces chopped tomatoes
  • 1 garlic clove, crushed
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons tomato paste
  • salt and pepper

Recipe

  • 1 heat the ovem to 375°f split the chicken breasts almost in half and open out like a book.
  • 2 place in a non-stick roasting tin.
  • 3 whizz the bread into crumbs in a food processor, then mix with the herbs. mix the tomatoes with the garlic, vinegar and tomato paste.
  • 4 spread the sauce over the chicken, sprinkle with the crumbs then bake for 20-25 minutes until the chicken is tender.
  • 5 serve with steamed veggies.
