Spanish Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon oil
  • 1 1/2 cups long grain rice
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 (14 ounce) can stewed tomatoes
  • 2 (14 ounce) cans chicken broth
  • 1/2 cup frozen corn
  • 1/2 cup red beans

Recipe

  • 1 heat oil over medium heat.
  • 2 add rice; brown.
  • 3 once browned add garlic & onions. cook for 5 minutes stirring occasionally.
  • 4 add stewed tomotoes,with their juices.break up large bits of tomatoes.
  • 5 stir in all spices.
  • 6 add 1 can of chicken broth.
  • 7 bring to boil; reduce heat.
  • 8 add chicken broth as needed in order to cook rice.
  • 9 once rice is cooked simmer until liquid is gone.
